La Chandeleur or the pancake festival.
Every year on February 2 is Candlemas. This is an event in France that young and old alike look forward to, because it's the day we eat pancakes! We eat pancakes much more often than at Candlemas, but at Candlemas, it is inevitable, all houses smell of pancakes!
Pancakes by Candlemas are quite a symbol!
But why, then, do we eat pancakes?
There are several theories because this tradition is very old but for my part I prefer to evoke the esoteric theory which recalls that the round shape of the pancake and its yellow color would represent the sun. It would therefore be a way to celebrate the sun and the end of the winter period.
A saying dating back to 1922 is proof of this: "at the candlestick, winter ends or takes force". Which means that we are all fingers crossed that this is true and that winter is truly behind us! Following this saying of candlelight, I have summarized the phrases most used to talk about the weather (a subject very dear to the French). You will find this list in the vocabulary section 😉
The traditions for this Candlemas have evolved over time.
In the early 1900s, a superstition was born. You must absolutely sauté the first pancake with your right hand while holding a golden coin in your left hand. If the pancake is turned successfully then you will not run out of money for the year! Now this ritual has disappeared of course, besides nobody owns gold coins anymore and I don't think it would have the same effect with a euro coin !!!
However, the French like to keep traditions and sautéing pancakes remains a ritual followed by all. Sometimes we add a little challenge for anyone who drops the pancake on the floor: it's the pledge!
The children are responsible for choosing the pledge while the dog is delighted with the pancake that has fallen to the ground!
My dogs are never far away when I make pancakes, just in case… !!
I'll give you the recipe for the ham and endive pancakes that I made this afternoon, it's very simple and delicious!
French crepe with ham and chicory
Here is the list of ingredients for this recipe for 4 fairly generous pancakes:
- Crepe batter
- 8 endives
- 4 slices of white ham
- Grated cheese
- Bechamel
- Butter
First, you have to braise the endives. Melt butter in a stewpot, for the 8 endives, you need about 80g of butter. Add the endives cut in half lengthwise and simmer gently for about an hour, stirring occasionally. Above all, they should not be roasted because they would then be bitter. After an hour, they will have taken on a nice, light golden color and if you notice that they are tender with the tip of your knife, they are done!
The second step is to make a béchamel sauce: melt butter in a saucepan, add the flour and then the milk until you obtain a smooth and creamy consistency.
The third step is to stuff the pancakes:
On a pancake, spread the béchamel (enough so that it is smooth), place a slice of ham on it then on the slice of ham add about three halves of endive (as much as you like), sprinkle with grated cheese then roll the crepe to make a roll.
You can prepare this recipe in the afternoon, just reheat them in the microwave when sitting at the table, accompanying them with a green salad, for example.
And for dessert, of course a few sweet pancakes that everyone will garnish with sugar, jam or why not Nutella and your Candlemas will be perfect 😉
