The festivities are barely behind us when we start turning a simple cake into a party! And here we go again for a family reunion around this delicious cake which now exists in many ways!
But where does this tradition come from?
The origins of the galette go back a long way! This tradition dates to the days of ancient Rome, more precisely during the Saturnalia, when the Romans celebrated Saturn. They (the festivities) took place between December 17 and 24, and at that time, they allowed people to turn the tables. The slaves had the opportunity to become kings themselves for a day! In each pancake was hidden a bean because that is how the Romans elected their representatives.
The sharing of the cake has nothing to do with religion, but it happens to be eaten during Epiphany and the celebration of the Three Kings among Christians. Until 1875 the broad beans were real vegetable beans, they also allowed the most tight-fisted to swallow it so as not to have to pay the next cake! Indeed, custom dictates that the one who has the bean becomes the king and offers the next cake. From 1875, the beans are porcelain, then in 1960 they are made of plastic (cheaper) and become promotional items. There are even some bean collectors called « fabophiles ».
Epiphany is January 6 and since it has not been a public holiday since 1960, we decided to celebrate it on the first Sunday after January 1. But the tradition that one pancake leads to another, we can eat it all January!
How does this pancake tasting take place?
The tradition of the pancake follows a specific protocol. The galette is divided into as many parts as there are guests. The youngest child (symbol of purity) stands under the table and assigns each guest a piece of cake by name! Naturally, most of the people make sure that the bean comes back to a child. It is a joy for them to have the crown, because where there is a king, there is a crown of course! When buying a cake, there are now two crowns, one for the king and one for the king to crown his queen!
Speaking of king and crown, since Valéry Giscard d´Estaing (1975), one of our former President, the cake has been celebrated at the Elysée every year but without bean or crown! Logical, right? It would be scandalous for a President of the Republic to be crowned king! 😉
What does this pancake taste like?
The traditional “galette des rois” is made with frangipane. It is a puff pastry filled with a cream composed of two thirds of almond cream and one third of pastry cream.
There are many variations now like the king's apple cake, or pears-chocolate. There are even "dry" ones without any cream inside!! I find it a little "chokes-Christian"!! This expression has nothing to do with religion, here a Christian is nothing more than a human being like you and me and it means that the dish we are tasting is difficult to swallow because dry or stuffy!
Each year the galette is the cause of an increase in dental visits! So, you must be careful and chew it slowly without rushing if you do not want to lose a tooth!!
